When I should consider Enterprise Document Composition over Document Composition? What is the letter volume per day the drives the decision?

Good morning Chuck. Document Composition can process 6 documents per minute or roughly 8,640 documents per day.

Hi Chuck, the "regular" Document Composition module processes 6 documents per minute. The Enterprise Document Composition module produces large batches much faster.  See this post for more detail:
