After I assign a document to a workflow and a user, I see by logging in to that user's dashboard that it goes to the "My Tasks" list for the user. But, once the user completes the task, I'm not seeing where the document they completed is marked as done, ie with an accepted or rejected tag. How do you track whether an workflow assignment was completed? Also, is there a way where you can see all assigned workflows that are open to a current document? I see the logo that says how many workflows the document is assigned to, but no details about the assignments.

You will need to add this functionality yourself. It is possible to add to this.

If you use the out of the box adhoc task to assign a workflow, it should assign a task back to the initiator notifying the task was done by the assignee.
