What would be the "best practices way" to publish a document from one Nuxeo instance to another?

• Automation service
• REST

There is a built in remote publication capability in Nuxeo, you just have to declare a remote publishing zone in your Nuxeo, and it will be available into the publication tab into the drop down list. Is it what you looking for ?
