I need set (or not) the system.serverMode in alfresco-global.properties ? Which means each item ?

Hello,

the server mode was only recently introduced in the 4.2.x code line (and probably 5.0 as well). For most intents and purposes, it is - at the moment - mostly a label for your server. The only feature I know that currently evaluates this is the Enterprise-only cloud connector / hybrid sync. That feature will only be active with server mode = PRODUCTION.
