In Share, when I search with a word (image 1), and after that I change the sorting (image 2) the number of results is different …

It's likely to do with the Lucene query limits - either resultset size, or timeout. I expect the different sorting mechanisms take slightly different times. These can be overridden via alfresco-global.properties.
