New content model

Hello,
I am new to Alfresco and I want to build a new data model and I'm not too sure how to do it.
I would like to create multiple categories for documents (eg department) and depending on the category chosen, I would like to select a sub-category.
Each sub-category should have its own properties.
Someone has an idea?

So I created some custom types and aspects and now I want to know if its possible, in the add content dialog, to choose my custom aspects to add to my files.
