By default, alfresco gives Consumer Permission for everyone for every files/folders. But you have said you don't want to see your uploaded document to other. So, one possible way to do this is, just close the permission which are inherited and add permission for users who you want to see that document. You can do this in document details > Manage Permission > {close here inherit permission button} and add new permission.
