It's not "dangerous" as long as you've got the in-house skills necessary to manage it, as well as a sensible disaster-recovery plan (which you've already got on all your other internal systems hopefully)
People pay for Enterprise licenses to get priority access to Support Engineers and Developers if/when things go wrong (not necessarily directly with Alfresco, e.g. a server crash).
I take snapshots of my servers daily at the ESXi VM level. Therefore I get all data and system settings. I also replicate these snapshots to a remote server. I also plan to backup the data\home folders via a file agent to give me quick restores of documents… So.. I guess I'm good? Now if I can figure out how to install a clean version of v4 I'll be happy.. I have another topic open in regards to that. Feel free to check that topic out for no one has responded in a few days.
