I am brand new and i just started installing alfresco an hour ago so be patient! 😉
1. What is the diverence between "Community Edition" and "Business Edition" when it comes to DMS ?
I found a side telling me about the diverences but i did not get any info about real features i can not use in "Community Edition"
2. In first place we would like to user alfresco as a DMS for contracts only ( noting more). How to do that ?
I found Dokumentarchive and also a possibility to upload file there and in Repository but i am not sure what would be the right way to do it. Also i am not sure how to category file. A small howto would be nice.
I also found some videos but not a real "best prectice" to do it !
Any hint will be welcome!

The difference between "Community Edition" and "Enterprise Edition" is primarily that Community Edition is supported by yourself and the community whereas Enterprise Edition is supported commercially by Alfresco.
There are a few features only available in Enterprise Edition, but the vast majority of the functionality is identical. For example, clustering and JMX are two Enterprise-only features. See this page for more info.
Regarding your second question, can you be more specific? Certainly, out-of-the-box Alfresco can be used to manage contracts. Many people choose to add their own custom metadata so that they can use business-specific types, aspects, and properties. For example, you might want a "customer" field or a "contract term" field or any number of business specific pieces of metadata. If you want to learn how to do that, take a look at this tutorial.
To learn how to apply and manage categories, go to the new docs site and do a search for "Categories". If you can't find what you need there, come back here with some specifics and I'll try to help.

I can not find the Administration console:
As i do not have a space to upload an image i can not show you what i see.
I simply installed the community version without any configuration changes. But i defenetly do not have an "Administator console" icon!

Why did you expect to see an "Administrator Console" icon? Where are you looking?

In Alfresco Share there is a tab for "more" which has some admin functions. There is no "Administrator Console".
There is an "Administrator Console" icon in alfresco explorer which will show up if you have admin privileges.

The Explorer client and the Share client both use the exact same Alfresco repository, so you can manage your categories in Explorer and then use either Explorer or Share to tag contracts with your categories.
