How can I make  a custom logic each time a workflow starts or end ?
Not only for a specific or custom process, but all types of workflow.

for example how can I do the custom logic when I choose to start one of the existing workflows ?

Can you provide a real-world use case as I just don't understand enough about what you are trying to do?  Perhaps you can try and describe a story in basic business terms.  Maybe it is just me but I don't understand what you are trying to do.

I want to make the custom logic once one of these existing workflow is initiated.
I'am not trying to define a new process.
