The log indicates that you may have some spring context files referring to com.itextpdf. I'd shut down and restart with the backed up version of your WAR files. Or if you don't have those I'd shut down and do a recursive grep to find the references to those classes and delete those context.xml files (assuming they were shipped with the AMP). Then restart.
