Does anyone know where the sidebar and the working area are stored?

Yes, I would like to know, where the files with data about sidebar and working area are stored.
For example the data about categories are stored here C:\Al_Labs_3b\tomcat\webapps\alfresco\WEB-INF\classes\alfresco\bootstrap\categories.xml

I need these information because i would like to make the following changes :
