Should I switch to alfresco enterprise?

I've been evaluating alfresco labs 3.0b for a biotech enterprise.  I see that alfresco enterprise 3.0 has just been released.  Is it reasonable / easy to switch from labs to enterprise?  Is the new enterprise version  the same as, or ahead of, labs 3.0b?  If I switch to enterprise 3.0, and labs 3.0c (or whatever) comes out with cool new stuff, will it be easy to switch back?

For cool new stuff you should use and evaluate the labs version. In that way you will know what to expect and plan you use of the enterprise version. But I would always recommend to run the enterprise version for an enterprise production system, where your set priority on stability and support for any issues version cool stuff. So there would never really be a need to switch back.

In terms of new functionality the Labs is ahead of Enterprise.  However, Enterprise also receives fixes for customers before they are applied to Labs, so may be "ahead" in certain cases - at least for short periods. 

Generally, it is not a simple swap in/out between the two and I would agree you are better off using Enterprise for production and have a separate Labs instance to evaluate and demo the upcoming functionality.
