Hello, 1. Is it possible in Alfresco to recover single files, e.g. a PDF file? Or do I always have to recover all data? 2. Can I rollback one file, e.g. a PDF to the status it had on a certain day?

In DM, there is no one-click rollback. You could implement it yourself with a UI customization or by writing a custom action. To roll back a file manually…
1. Versioning has to be enabled for the document. 2. Click "View" or the version number next to the version you want to roll back to. 3. Save the old version locally. 4. Check out the current version. 5. Do a check in, but specify that you will upload the new version. Select the file you downloaded in Step 3.
You have now checked in an old version as the current version.
In WCM you can roll back to any previous snap shot in a single click. If there is a single object in an old snapshot you want to make current, one way to grab it would be to mount the old snapshot via CIFS, grab the file, then upload it into your sandbox and submit it to Staging.
