What OCR Software do you recomendo to use with Alfresco???
Any open-source OCR software that can do the job and work with Alfresco?

Tesseract is an excellent OCR. It is open source and sponsored by Google: http://code.google.com/p/tesseract-ocr/

It is possible to configure it as an external transformation in Alfresco. Details on this forum post: http://forums.alfresco.com/en/viewtopic.php?f=14&p=46874#p35617
