Official Alfresco training will always be for the Enterprise versions, but not much of knowledge you learn about using Alfresco will be version (Labs/Enterprise) specific so this should not matter.
You may find a trainer that will be able to train you on a Labs version or just hire a consultant that can answer your questions.
