I want to display the number of tasks the user has processed today.

Can anyone guide me how can i create the query of this ?

if it is not possible to do with the query api, you have to manually create a query on the db session

have a look at the HistoricTaskInstanceQueryImpl and related classes, you could add your own method for querying this. You can add a JIRA-issue for this, and always welcome to contribute a patch to it as wel
