I'm looking for information on how Alfresco handles images. 

-By default, what metadata does it extract from an image? 
-Does it import all EXIF/XMP data and associate with the image? 
-Does it display the info on the image property section?
-Can users define searches based solely on metadata attributes?
-Is it possible to add custom fields to an items info page?

I'm sure I'll think of others but it be greatly appreciated if anyone could help me with these questions.

as far as i remember, by default it doesn't really extract much - just the file name, who uploaded it, when, etc - just like for regular files.

-Does it import all EXIF/XMP data and associate with the image?
There is a forge project exactly for this thing.  it allows you to configure which metadata you want to extract:

-Does it display the info on the image property section?
Once you extract the metadata, yes.

-Can users define searches based solely on metadata attributes?
Yes, you just need to make sure whatever properties you are extracting, the alfresco content model marks those as indexable by search - then you can easily search for them.   This is really more related to content modeling:

-Is it possible to add custom fields to an items info page?
  Yes, same link as above. 

We are also enhancing general capabilities in this area.  In Community Labs version, you should see the new thumbnails service.  i haven't played with it, but the idea to allow easy resize of images, etc.

Also, check out this forge project - allows you to create thumbnails for the images.
