How to create doc types with custom metadata?

This is an extremely basic question, but I am a new user and need to know what Alfresco feature allows creating the equivalent of what is usually called a "Document Type" in other DM systems. I need to create a "proposal" type with Title, Date, etc an "invoice" type with Invoice number, date, vendor, etc. I thought "Categories" would allow this, but I cannot edit any metadata. Thanks in advance.
