Edit Scanned Document Metadata

Hi there,

We are evaluating Alfresco and so have little or no knowledge. When we scan in a document we need to be able to edit the metadata, which is fine, however we need to add some custom fields to this metadata. How can this be done so that any document scanned in will show our new fields and allow us to enter data into them.
