custom & default properties

Hi,

         I have got a problem with the document properties. I defined new types and properties in my model. But now, when i trying to create a new document, i select my custom type and when i clik on finalize all my new properties appear with the default properties!! how can i delete the default properties??

And how about sub-properties??I'm going to explain it:

   How can i do that??
