Best way to create custom workflows

Hello friends,

I'm working with workflows in Alfresco Community 5 but I cannot found the option to create new custom workflows.

I want to add specific custom fields on every activity depending where is the state of the process.

Also, I need to aprove any times my task as the video :Alfresco Workflow with n level approvals - YouTube

As always I advise people to look for the right keywords via Google. E.g. "alfresco custom workflow" will yield the fantastic tutorial by Jeff Potts. This should get you started on "how" custom workflows are added to Alfresco. The workflow shown in the YouTube video looks like any other generic workflow, so there should not be a problem to implement that when following the tutorial and understanding the base concepts.
