I am on Alfresco 3.3 running ontop of Ubuntu 9.10 (there is no openoffice-headless version) as user alfresco

This document can't be previewed.

I cannot see previews of Word documents? How come?

.doc
.docx
.dtd
.txt
.xls
.xml

.pdf does work! 😉

In alfresco-global.properties I set just after the line
ooo.exe (which points to the correct exe)
ooo.enabled=true

Am I still missing an openoffice package?

I can start: /usr/lib/openoffice/program/soffice "-accept=socket,host=localhost,port=8100;urp;StarOffice.ServiceManager" -nologo -headless -nofirststartwizard
and the cataline.out will show:
INFO: [alfresco.util.OpenOfficeConnectionTester] The OpenOffice connection was re-established

So I have connection but ooo cannot do anything with the documents?

This may be an OoO version issue.  What version are you using?  I have the same install on Ubuntu and it operates ok.

The other thing may be OOo crash issues.  The JOD Converter enablement can mitigate this type of issue.

I use OOo 3.1.1 OOO310m19 (Build:9420)

I also to started alf_start.sh as root (sudo) but no change. The only out of the ordinary is that I use a PostgreSQL db

I wonder if this post will help you.  Main suggestions being:
Java 1.6 (wipe our openjdk)
dos file issues.
