Which action or rule can I do to make a space accaessible exclusively by one group or user?

Hi,

There isn't an action to do this.  The assignment of specific permissions is done via the UI.  But you can write your own action to perform the operation - however you must be careful as the action will run as the user that queued / triggered it in the first place.
