How can I modify the CMIS attributes? I would like to add two of my own and change the updatability of another, but I can not find where this is configured.

To add CMIS attributes you have to add new schemas to Nuxeo, please use Nuxeo Studio or read the Dev Cookbook for more.
All editable fields in Nuxeo are updatable in CMIS.
