How can i force a specific web form to generate only one instance of web content?

To confirm, do you mean that the webform would replace whatever content it had created previously?

It would be a solution, but what I really mean is that Alfresco should not even show the option "Create content" for that webform if it has already one instance data.

Ikes.  No way to do that presently.

This would be a great contribution.  If you want to update the web form wizard source, then file a JIRA ticket, and add your modified code to the ticket.  We will evaluate for clean-up, QA, and inclusion in a future distribution.
