how do we show aspects we have created in our contentmodel in the document library -> manage aspects -> available to add

and how to we remove the ones that are there by default?

Depending on the exact version of Share you're using, either customise the list in the aspects.get.config.xml file within the alfresco.war, or the share-config-custom.xml in the web-extensions folder.
