Set versionable and categorizable as default

is it possible to allow versioning and allow categorization for any documents as default?

There are several ways to accomplish this. The easiest is to create a rule 'add aspect versionable to all inbound items' in Company Home and check the option 'apply rule to sub spaces'.

You can create another rule that adds the cm:generalclassifiable aspect.
