What is the correct way to upload a new version of a file without keeping the old ones ?
I have been "uploading new version" and then deleting the Versioning aspect.  Is this correct ?

I do not see the old version in the deleted files (trashcan).  Am I creating orphan documents somewhere (which would be bad) ?

Can I add an aspect to tell Alfresco not to keep old versions when I upload new version ?

if your node does not have the versionable aspect then it won't have previous versions in the version store. 

However if you are concerned about disk space there are two other  processes.   The first is archiving which is like windows recycle bin and allows deleted content to be "undeleted".   The second is that orphan nodes are only deleted by the content cleaner job.
