Reexecute asynchronous workflow / uses same deploymentId ?

Reexecute the asynchronous workflow withe the help of managementService.executeJob(JobId), 
by default whether the workflow will invoke the same dpeloymentId or latest deploymentId ?

In case if it picks the latest deploymentId, is there any option to continue with the my deifned deploymentId ?

It will use the deployment and process definition of the moment the job was created, not the latest one.
