You mean the expression in a flow condition? This is a JUEL-expression. I'm not sure what characters/literals are allowed for names/functions called but I suppose that at least in string-literals used in the conditions, all UTF-8 characters are allowed.
What exactly do you want to reach by using hindi-characters in your process?
