You can run two alfresco's on a VM in the same way that you run two instances of alfresco on a single (non virtual) machine. Basically you need to have two instances of tomcat and make sure each instances has independent resources. (tcp port numbers, content store and database schema). I've discussed how to do it in these forums already.
