Identity tutorial

I'm new to Activity.
I'd like to understand better the identity mechanisms but I didn't find any documentation in the Users guide.
Why, when and how login ?
Is there a tutorial ?

Tks, very usefull, but it explains how.
I need also understand why.
Examples in the standard tutorials don't use identity and then I don't unerstand what's mandatory, what's usefull and what's optional.
Just an example claiming a task API needs the user claiming the task, if I'm logged is stil needed ?
When I complete a task no user is needed why ? Is supposed to be me (if I'm logged) is supposed to be the claimer ?
