How to download all documents via script

Hi everyone,
How can I download all documents via script (linux command) ?
I want to backup all documents into a readable format of the last version of each document.

Ideally you'll have access to the server and perform a FULL backup of Files + Metadata (Database) + Indexes.

If that is not the case, what about mounting the repository via CIFS or WebDAV and copy/pasting?
