How can I change the background color of the header title section?

Does anyone know how to change the background color of the header title section?  I would prefer to use less variables or themes, as we want different colors on different sites?  Any good ideas?

Please take a look at the Alfresco documentation about customizing the header style. It covers how you can define LESS variables to be used in the styling of Aikau-widgets (which the header is based on).

This still doesn't help me, at least not that I can tell.  I am not trying to change the black header like that blog post shows.  I am only trying to change the title section of the header, do I follow the same principals?  Do you know a tutorial or method for just that section?

Yes, you can follow the same principals. There isn't a specific tutorial describing exactly what you want to do. It might be that you can't do exactly what you want to do easily, and if that is the case then you should feed that information back to us - but unfortunately your question at the moment does not provide exact details of the final end goal that you're hoping to achieve.

See in the picture below?  I am not trying to change the black section, I have already done that and it works great, I am trying to change that 2nd, title section.  Both of your post are great ways of changing the black, but not the part I indicated below.  I hope that helps you understand what I am trying to do.  I just want to change the background color to start.

Thanks for providing the additional information - that's very helpful.

The LESS variable you want to change is called @shareTitleBG - unfortunately for some reason it was not in the defaults.less file in Aikau where it should have been. This means that you can't currently make use of it (because it gets set after the theme overrides have been applied), however I've resolved the issue (see this PR: Move LESS variable to correct location by draperd · Pull Request #1318 · Alfresco/Aikau · GitHub ) and it will be available for use with the Aikau 1.0.99 release which will be out later this week (at the time of writing).
