We have so far good experiences with Algresco and most often use the document library.
As we have critical information in here I would like to create a seperate backup of the documents only outside Alfresco in case of server faillure etc.

I found a lot of information about export and import but not related to the real documents (so far)

What I am looking for is an option to export the documents, ideally within the folder structure, in a readible format (not .bin)

any suggestions?

Yes you should learn how to backup and restore your database, content store and alfresco configuration.     And you may also want to consider backing up your lucene indexes.    Export and import are not really suitable for full backup purposes, since they will be far too slow, may have file size limits and can't be used incrementally.

By all means use export/import for small bits of ad-hoc backup via ftp or ACP, however that's not the way to go for your full backup.
