As an Linux admin, not Alfrescoman, I can suggest that Alfresco want to talk to "/bin/openoffice", so you can try to find what RPM provides this one:

$ yum whatprovides \*soffice

openoffice.org-core-2.3.0-6.10.el5.x86_64 : Core modules for openoffice.org
Matched from:
Filename    : /usr/lib64/openoffice.org/program/soffice

openoffice.org3-3.1.1-9420.x86_64 : Brand module for OpenOffice.org 3.1
Matched from:
Filename    : /opt/openoffice.org3/program/soffice

So, you can start with openoffice.org-core-2.3.0-6.10.el5.x86_64 (for OpenOffice-2) , or openoffice.org3-3.1.1-9420.x86_64 (if you prefer OpenOffice-3).
