Most documents became unable to edit offline yesterday. I found out that by deleting, and reuploading from my back up copy, they could be edited offline again. 3 or 4 of them cannot be deleted.

I had the same problem after modifying the contentModel.xml file, to enable the aspect "cm:generalclassifiable" for all new files by default. (see http://wiki.alfresco.com/wiki/Versioning_Behaviour)
This change worked for new uploaded files. But I could not edit or upload new versions for the already existing ones. I had exactly the same behavior as you describe except for
"Unable to check out Content Node due to system errorource node class has no callback: {http://www.alfresco.org/model/content/1.0}generalclassifiable"
I restored the original contentModel.xml file and restarted the Alfresco server. And now it works again.
Did you modify the contenModel.xml file?
