Backup and Recovery - Steps

Is there any step-by step tutorial available in taking "cold backup/recovery" of alfresco complete system.

Though i got overall idea through

But still i am unable to understand backup procedure of postgres database. (alfresco database/username/password are not known)

You can get db details from alfresco-global.properties file.
