I'm wrapping my head around the Alfresco suite and wanted to curiously ask why ECM (CE) uses a SQL database.

Because it needs to provide a ACID-compliant means to store metadata, workflows, ACLs, persistent settings, audit data etc. in addition to the actual content of files.
