Where is Metadata Kept

All,

I'm trying to get familiar with Alfresco. 

Can anyone tell me how meta-data is kept?  I found an XML file that appears to have meta-data in it but when I did a simple update, the change was not persisted.  Neither do I see any of the meta-data in the database.
