It's a bug, which has been resolved in the trunk.
You can build Designer from the trunk and then it works.

Checkout the Trunk and run the build.
Deinstall Designer and reinstall it from the org.activiti.designer.updatesite/target directory.

I just tried to reproduce it, but couldn't. You don't see the calledElement attribute being written in the XML?

I have a main process diagram with call activities and select a called element (process pool in another diagram, same project) for one of it.
after saving and then clicking somewhere else, the called element field is empty again.
In fact it worked for exactly one element, but I don't see any difference to the others.
I made some screenshots, but just realized that I cannot upload them here…

just found out why it works for you, but not for me…
It works when you type in (or c&p) the Called Element into the text field,
but it doesn't work when using the "…" button and using the chooser-window.

No it also works fine when using the "…." button for me. So I really can't reproduce it.
