Is Nuxeo 5.6 (with Tomcat 6 distribution) compatible with JDK 7 (Oracle) ?

Yes. The JDK7 support has been introduced in Nuxeo 5.5 (NXP-7859). All known issues have been fixed for 5.5 or 5.6: see https://jira.nuxeo.com/.
