The easiest would probably be to attach another disk to your VM then move /var/lib/nuxeo/data to your new disk (and update nuxeo.data.dir accordingly).
The other option is to extend the disk size using your hypervisor's tools, the boot the VM on a gparted iso to resize the root partition.
