Which Activiti Designer are you looking to customize?

The eclipse plugin customization details are available in the Community Edition Users Guide (Chapter 12) here: Activiti User Guide 

If you are looking to extend the V6 Designer there is no documentation but it is a simple Angular1 app that has many extension points, just got to dig into the code.
