It's possible to hide a file? (without using permissions, I mean in a different way)

As far as I know, no. You need to touch its permissions.

Alfresco has a sys:hidden aspect which can be used to hide files in specific clients / via specific interfaces, but that functionality is not documented and considered more of an internal one, which should probably not be relied upon for business solutions.
