Can we built our own workflows rather than using the default ones such as review by the group, assign a new task to the user, etc. in our Alfresco Community Edition? And also can we define our own option in the drop down of "Status" field instead of using On hold, In progress, etc. ?

Hi,

Answer of 1st Que is YES. You can make your own workflow. For that, you need to define BPMN file, a model file and other stuff. for that there is one great tutorial By Jeff Potts‌ here it is Creating Custom Advanced Workflows in Alfresco.
