EFS vs FSx storage options

We are preparing the infrastructure for a deployment in AWS for Alfresco Content Services. We are moving from an on prem installation.
We plan to use EKS, RDS (for postgresql relational database) and S3 service (for contentstore).

As noted in the documentation, transformation service needs an EFS volume for Alfresco Shared Filesystem (SFS).

In our infra, we only support FSx volumes.

My question is about whether we can use FSx volume, and if it is, how to tweak the helm chart on the config for doing this.

Also, if this has any impact on performance.

Finally, we found this possibility:

--set alfresco-transform-service.filestore.persistence.enabled=false

But not quite sure what are the implications of using it.

Our use case is basically a collaborative use case accessing documents via Alfresco Share, so users require to see thumbnails and previews for Alfresco documents.
