You have different options:

[Easy and user friendly path] Use Alfresco Model console (the one you are refering). >> Content modeling with Model Manager | Alfresco Documentation
[Geek path] Building xml code and including it in your deployment as a custom code. >> Working With Custom Content Types in Alfresco | ECMArchitect | Alfresco Developer Tutorials

I would not going to recommend the "user friendly path", as it is does not offer all the options you need to deliver a, lets say, complete solution.

And considering that Share is not going to evolve anymore, I doubt any of the missing features will ever be included.

So, for me, it is a no-go.
