I am trying to figure out how to use searching, and/or configure how search behaves, and am not sure that I understand it.I'm not sure how to put this clearly…Basically, Alfresco says it has a search engine that works like internet search engines, but it has an implied OR, instead of an implied AND,

a '+' sign in front of the search words behaves like the traditional 'and'.

My reason for asking is not my personal use, but what others will be able to do with it, and I would prefer to leave them as much of a 'just makes sense' default behaviour as I can.

That tip is good for my own searching. But how can I configure 'out of the box' behaviour for others?

It is not configurable, please raise a JIRA item if you think it would be useful.

You can also use "-" for NOT as well as "+" for AND as you already know.
